What is the coefficient of viscosity and how is it defined?

The coefficient of viscosity (η) is a measure of a fluid's resistance to flow. It is defined as the ratio of the shearing stress (force per unit area) to the velocity gradient in a fluid. Mathematically, η = (shearing stress) / (velocity gradient).
